2 PCIe SSD's Any Benefit

I have 2 Intel PCIe 3.0 SSD's. If they are identical SSD's or if they are different SSD's, can I expect to see any improvement in disk copy rates?

If by that you mean using one as the primary drive, and the other as a L2 cache for it? No, that would in fact slow down the system overall. The faster drive is always the one you want to use as a L2, so you'd want to get (for example) a small-ish NVMe to act as a L2 cache drive on either of the PCIe SSDs. Or use system RAM as a L1 cache against them.
