For some reason there is a specific disk that cannot be added to a cache task. What can be the reason for the error message
Failed to create or join a cache task
?
And how to get more information why it actally failed?

You may check if there was a Windows event logged by the source "FancyCcV". If you see this event, you may upload its event data which contains error information.
Usually this is because the volumes to be added are very huge while the cache block size in this cache task is too small to handle it.

I was able to add the disk to a freshly created task. Indeed it suggested larger block size. However the original cache task has already larger disks attached to it, so that it is not clear why it was not possible to add this specific disk too.

When adding more volumes to a cache task, memory overhead will also increase. It is possible that the memory overhead becomes too big if adding a new one. You may increase the block size of this task and then try again.
